Chef Hugh found his true passion for food and culinary through fishing with his dad as a kid. He always loved the taste of fresh seasonal food especially seafood. Chef Hugh has a long history in hospitality and culinary starting at the age of 15 where he washed dishes after school at a local cafe. At the age of 18, he started cooking at Longhorn Steakhouse and soon after went on to graduate from culinary school at Le Cordon Bleu. Chef continued his culinary experience at Marlow’s Tavern before opening The Whisky at Dr. Phillips as Sous Chef. He found his true test in fine dining at Vine's Grill and Wine Bar then perfecting it as Chef Partner at Fleming’s Prime Steakhouse and Wine Bar. In spring of 2020, Chef Hugh transitioned to become a part of The Aardvark Orlando bringing his culinary talents creating a menu filled with delectable and flavors of FRESH!
You can say the restaurant life was always there for Emmie. Born in Asia and raised overseas (with her military family). Her Japanese grandmother owned a pub in Yokohama, Japan. She remembers the joy of watching her grandmother entertain customers while having fun. In the mid-80's, her family moved from Sicily to the United States. She is a graduate of the College of Business Administration at the University of Central Florida. Emmie has worked on and off in the restaurant and hospitality industry for over 20 years so it was only natural for her to return to the restaurant business.
The Aardvark has over 200 beers curated by Daniel Menezes. A beer connoisseur, beer specialist, beer expert or whatever you would like to call him...He is the beer man! Daniel is originally from New Jersey before moving to Florida. He worked in a brewery down in Brazil, as well as, in scratch kitchens tuning in both his food and beer.
